However, this autonomous community has two of the most important: Los Pedroches, in Córdoba, and Huelva, which is commonly known as Jabugo Ham, as this town is the epicentre of its production. Let us remember that Iberian ham is made from the Iberian pig, a native breed of the Iberian Peninsula, and it can be of different qualities. The highest category is Acorn-Fed Iberian (Ibérico de Bellota).

Andalusian Extra Virgin Olive Oil

Extra virgin olive oil, liquid gold

Olive oil is one of the most renowned typical products from Andalusia—especially extra virgin, commonly known as liquid gold. You will see the iconic Tío Pepe bottle image everywhere! There are different varieties (fino, amontillado, manzanilla, Pedro Ximénez, moscatel, etc.), but they all share a dynamic ageing system based on criaderas and soleras, which blends wines from different vintages and thus achieves a final consistency with great character.

Plate of Mojama

Mojama, an age-old salt-cured delicacy

Mojama is not only one of the typical products from Andalusia, but also one of the oldest, as it was already eaten by the Phoenicians who traded along the coast of Cádiz several centuries before Christ. It consists of curing tuna loins in salt, which are then air-dried. Its production is one of the main sources of wealth for towns such as Barbate, where it is caught using the traditional almadraba technique. Delicious when served as a tapa with a drizzle of extra virgin olive oil and paired with a fine Sherry wine!

Other typical products from Andalusia

In reality, these four typical products from Andalusia are a very limited sample of everything this region has to offer gastronomically. In fact, the Regional Government of Andalusia has recognised dozens of products with different quality designations, whether Protected Designation of Origin (PDO), Protected Geographical Indication (PGI), or Traditional Specialities Guaranteed (TSG).
